Smashed Avocado toast with Poached eggs

Simple but full of flavour!

Smashed avo and poached egg on toast

This is a perfect weekend breakfast when you have a little more time. It's simple but packed with flavour, nothing beats that creamy avocado.

Smashed Avo toast with poached egg


  • 1/2 - 1 Avocado (depending on the size)

  • 1/2 teaspoon vinegar

  • Pinch of chilli flakes

  • Salt and pepper

  • 1-2 Slices wholemeal bread (depending on how hungry you are

  • 2 eggs


  1. Start by preparing your avocado. Place your avocado into a bowl and mash using a fork. Add the vinegar and chilli flakes, season with salt & pepper and mix well.

  2. Boil water in a saucepan, once it's starting to simmer crack your eggs into the water and keep the water simmering.

  3. Pop your toast in and when it's done spread with your mashed avocado

  4. Lift your eggs out of the water using a slotted spoon. For a runny yolk, poach your eggs for 3-4 minutes, longer if you prefer a hard yolk.

  5. Place your cooked eggs on top of your avocado, sprinkle with dried chilli or chilli flakes and enjoy.

You can replace the egg with a few slices of smoked salmon or edamame beans for a vegetarian version.
